The problem on a weeknight is rarely that you do not own enough recipes. It is that the fridge has parts, and the parts do not yet look like dinner.
Use a formula instead: something filling, something protein-rich, vegetables, sauce, something crisp or fresh, and one finishing move that makes the plate feel finished.
This is how leftovers become meals. Rice becomes dinner with tofu, frozen broccoli, peanut sauce, and scallions. Toast becomes dinner with beans, greens, olive oil, and lemon. Potatoes become dinner with lentils, tahini, pickles, and herbs.
The sauce decides the direction.
Rice, tofu, broccoli, and chickpeas can become very different dinners depending on the sauce: tahini lemon, peanut lime, tomato harissa, miso ginger, salsa verde, coconut curry, or a quick pan sauce.
If dinner feels random, choose the sauce first. It tells the rest of the ingredients where to go. Then add one contrast: crunch, acid, herbs, heat, or something fresh.

Base

Protein

Vegetables
Roasted, sauteed, raw, pickled, frozen, or leftover. The form matters less than color and texture.
Sauce
Tahini, peanut sauce, tomato sauce, curry, vinaigrette, salsa, pesto, chili crisp, cashew cream, or miso dressing. Sauce is what makes the parts belong together.
Finish
Lemon, vinegar, herbs, nuts, seeds, breadcrumbs, pickles, hot sauce, scallions, or something crisp. This is where a plain bowl starts to taste like dinner.

Sear tofu hard, put it over rice, add frozen vegetables, and finish with peanut, teriyaki, miso, or chili crisp.
Pasta, chickpeas, greens
Cook pasta, add chickpeas and greens, finish with olive oil, lemon, garlic, breadcrumbs, or nutritional yeast.
Potatoes, lentils, something sharp
Roast or microwave potatoes, add lentils, herbs, pickles, mustard, tahini, or salsa. The sharp thing keeps the plate from feeling heavy.
